Avocado Garden Wrap

This vegetarian wrap is full of light, summer flavors. It’s a quick lunch that can be thrown together just as fast as fast food. We created a lightened-up guacamole with tomatoes, basil, spinach, and sprouts. For some creaminess and protein, we added havarti cheese, which is mild enough to not overpower all of the fresh, garden flavors.

    Light Avocado Dip

          1. Place all dip ingredients in a food processor and pulse on low (to prevent splashing) until ingredients start to combine, then process for about 1-2 minutes on high until smooth.
          2. Spread avocado dip on tortilla.
          3. Spread cheese, tomatoes, spinach, basil, and sprouts over tortilla.
          4. Wrap like a burrito. Enjoy!
