Bacon Jalapeño Stuffing

If you want to create a memorable Thanksgiving feast, serve this stuffing instead of a traditional recipe, and your dinner guests will talk about this for days. It’s filled with everything good in life—bacon, jalapeños, and creamy, delicious pepper jack cheese. Don’t let the jalapeño scare you off—this stuffing isn’t overwhelmingly spicy, it really just gives you the flavor of the jalapeño. So shake things up and try this stuffing for Thanksgiving!

          Directions
          1. Preheat oven to 350°F.
          2. Cover a cookie sheet with aluminium foil, then cover with nonstick spray.
          3. Spread out the bread chunks onto the cookie sheet into a single layer.
          4. Bake for about 30 minutes to make sure that the bread is completely dried out.
          5. Transfer to a large bowl.
          6. Leave the oven on.
          7. In a large stockpot, cook the bacon, onion, celery, jalapeño, thyme, salt, and pepper.
          8. After the bacon is cooked through, add the chicken stock and simmer.
          9. In a large bowl, mix the eggs, pepper jack cheese, and bacon mixture.
          10. Add the hot broth mixture to the bowl with the bread and toss until the liquid is absorbed.
          11. Cover a cookie sheet in foil, then cover with nonstick spray.
          12. Transfer the stuffing to the cookie sheet.
          13. Sprinkle the butter over the top.
          14. Cover with tin foil.
          15. Bake for 30 minutes.
          16. Remove tin foil, then bake for an additional 20 minutes.
