Fresh Corn Salad
- 6 cups corn kernels, cooked
- ⅓ cup minced cilantro
- ¼ cup fresh lime juice
- ¼ cup olive oil
- ⅓ cup chopped green onions
- 1 small jalapeño, minced
- Mix all ingredients in a large bowl.
- Refrigerate and serve cold.
- This will keep for 3-4 days in the fridge.
