Paleo Chicken Nachos

These chicken nachos are loaded with flavor...and they have 27 grams of protein per serving! Although it’s paleo, its is still a wonderful meal, no matter what diet you are following. The bell peppers add a delicious crunch as the replacement for chips, and the creamy guacamole with the jalapeño adds just enough heat. The best part is that it requires minimal time in the kitchen. I love easy crockpot meals that can be done by the time I get off of work!

          Directions
          1. Place the chicken and salsa in a slow cooker.
          2. Cook on low for 4 hours or on high for 6 hours.
          3. Once the chicken is cooked through, use two forks to shred it.
          4. Place the bell peppers on top of the chicken.
          5. Place the avocado in a small bowl, then mash it.
          6. Add the dressing, salt, pepper, garlic, and jalapeño to the avocado. Mix together.
          7. Top the the chicken with the guacamole.
          8. Enjoy!
