Pisto Spanish Ratatouille

Pisto is a vegetable medley that has zucchini, onions, eggplants, tomatoes and peppers. The veggies get flavored with garlic, thyme, rosemary and oregano to make for an amazing vegetable base that is then topped with a delicious egg or a creamy manchego cheese.

          Directions
          1. Layer the eggplant on a paper towel and sprinkle with salt. Allow to sit out for 10 minutes to remove excess moisture.
          2. In a large pot over medium heat, add olive oil and onions, sauté until onions are translucent (don’t let them turn brown).
          3. Add the remaining ingredients to the onions and cook for an additional 15 minutes or until the zucchini is soft.
          4. Enjoy warm or topped with manchego cheese or an egg.
