Red Velvet Cookies

These red velvet cookies are full of chocolatey goodness, and are sure to put a smile on everyone’s face this holiday season. The bright red and white make for a very festive cookie that looks impressive! These have some whole wheat flour, but even though we made them healthier, watch your portion control. I like to make these cookies small to keep me from eating too much. But they’re so good, it can be difficult!

          Directions
          1. Preheat oven to 350°F.
          2. Grease a cookie sheet.
          3. In a medium bowl, combine the flours, cocoa powder, baking soda, and salt.
          4. In another bowl, cream together the butter and sugar.
          5. Once creamed, add the egg, milk, vanilla, and food coloring.
          6. Mix the wet ingredients into the dry until well combined.
          7. Roll into small balls—about the size of a quarter.
          8. Place on the cookie sheet about 1½ inches apart.
          9. Bake for 7-10minutes, or until cookies are lightly browned on the bottom.
          10. Remove the cookies, then place them on a cooling rack.
          11. Prepare a pan with parchment paper.
          12. While cookies are cooling, place the chocolate in a microwave-safe dish, and melt, stirring every 30 seconds or until smooth.
          13. Dip half of the cookies in the white chocolate, then place them on the parchment paper.
          14. Set in a cool place until the chocolate has hardened. Enjoy!
