Salted Caramel Chocolate Cookies

You won’t believe the delectable flavor of this cookie—especially when you find out the nutrient-dense ingredients that make them up. Garbanzo beans are a great way to replace the majority of the butter in cookies, decreasing the fat and calories, while beefing ‘em up with fiber and protein. To achieve the caramel flavor without adding any unwanted calories, we used caramel extract. You won’t believe how delicious they are!

          Directions
          1. Preheat oven to 350°F.
          2. Grease a cookie sheet.
          3. In a food processor, blend the beans and eggs together until completely smooth.
          4. Add in the butter, sugars, vanilla, and caramel extract. Mix until creamy.
          5. In a medium-sized bowl, mix together the baking soda, flour, oats, and salt.
          6. Combine the wet ingredients with the dry ingredients until well mixed.
          7. Fold in the chocolate chunks.
          8. Chill the cookie dough for 30 minutes.
          9. Roll the chilled dough into about quarter-sized balls—it should make 24 balls.
          10. Place about 2 inches apart on a cookie sheet.
          11. Make sure to flatten the balls into your desired cookie shape—they’ll hold however you make them and won’t spread out while baking.
          12. Bake for 8–10 minutes until the bottoms are golden brown.
          13. Cool, then enjoy!
