Summer Fruit Crisp

Ingredients

  • 5 cups fruit of choice
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 2 tablespoons honey
  • 1 cup oats
  • ½ cup whole wheat flour
  • ⅓ cup brown sugar
  • ¼ teaspoon salt
  • ¼ teaspoon ginger
  • ¼ teaspoon nutmeg
  • 1 teaspoon cinnamon
  • ¼ cup unsalted butter, softened

Directions

  1. Preheat the oven to 375°F.
  2. Toss the fruit with the lemon zest, lemon juice, cornstarch, and honey.
  3. Pour the fruit mixture into a greased 8×8” pan.
  4. In a separate bowl, mix together oats, flour, sugar, cinnamon, salt, nutmeg, ginger, and butter until crumbly.
  5. Top the fruit mixture with the crumb mixture evenly and bake for about 40 minutes, or until golden and bubbly.
