Sweet Chickpea Salad

This vegan, sweet chicken salad uses chickpeas to replace the chicken, and the results are amazing! Filled with high protein and fiber from the chickpeas, this salad will keep you full and satisfied. I love making this recipe, because you can use it in so many different ways, so it never gets boring. I’ve enjoyed it as a sandwich, on lettuce, or by itself!
