Wassail Cookies

When I think of the holidays, I always think of wassail. During the holiday season, my mom would always cook up a giant pot of it. Every time I came home, I was greeted with the smell of oranges and spices. Wanting to capture the best flavors of the holidays into a cookie, I created this recipe. They taste exactly like the drink, and are the perfect blend of oranges, apples, and holiday spices. While the glaze is optional, I highly recommended it!

          Directions
          1. Preheat oven to 375°F.
          2. Grease a cookie sheet.
          3. In a medium bowl, combine the flour, baking soda, salt, ground ginger, cinnamon, and nutmeg.
          4. In another bowl, cream together the butter and sugar.
          5. Add the eggs, juice, vanilla, and zest.
          6. Mix the wet ingredients into the dry until well combined.
          7. Fold in the freeze-dried apples.
          8. Chill for 20 minutes.
          9. On a floured surface, roll out the ½ the dough until about ¼-inch thick.
          10. Use a cookie cutter to cut out the cookies.
          11. Repeat with the rest of the dough.
          12. Place cutouts on the cookie sheet about 1½ inches apart.
          13. Bake for 8–12 minutes, or until cookies browned on the bottom.
          14. Remove the cookies, then place them on a cooling rack.
          15. Prepare a pan with parchment paper.
          16. While cookies are cooling, combine all of the ingredients for the glaze in a small bowl.
          17. Mix until smooth.
          18. Frost the tops of the cookies with the glaze, then set on the parchment paper.
          19. Serve once the glaze has set up!
