Cuban Rice and Beans

Dried beans are a great source of protein that are also budget-friendly. However, there’s a reason people are generally willing to pay more for canned beans, because soaking and cooking beans for hours on end can be a hassle...unless you do this recipe. Simply add everything to the slow cooker and cook all day, hassle free. This dish is delicious and this recipe makes a lot, so be ready for yummy leftovers!

          Directions
          1. In a large saucepan, heat olive oil over medium heat and add onions. Sauté until onions are tender. Slice sausage into small rounds and add to onions. Cook until lightly browned.
          2. Place sausage, onions, diced tomatoes, chicken broth, carrots, celery, pepper, seasonings, rice and beans in the slow cooker.
          3. Stir and cook on low for about 10 hours. 1 hour before serving, add tomato paste.
          4. Top with 1 tablespoon green onions, 1 tablespoon cilantro, and ¼ cup cheddar cheese if desired.
