Similar to muffins, this veggie-loaded breakfast is a great meal for when you’re on-the go. It can also be made ahead of time. I added a variety of veggies into mine, but feel free to swap ‘em out for your own favorite veggies. These are really versatile and a great way to get protein into your diet first thing in the morning.

          1. Step 1
          Preheat the oven to 375°F. Grease a 12-cup muffin tin.

          In a skillet, sauté the asparagus, broccoli, and bell pepper for 5 minutes.
          3. Step 3
          Mix together the cooked vegetables with the spinach, eggs, salt, and pepper. Pour evenly into the muffin tin.
          4. Step 4
          Bake for 20 minutes, or until the center is set.
