Ingredients
- ¼ cup low sodium soy sauce (gluten-free, if needed)
- 2 teaspoons grated fresh ginger
- 3 teaspoons sesame oil, divided
- 2 garlic cloves, minced
- 2 eggs
- ½ cup chopped green onion
- 2 cups chopped fresh pineapple
- 2 cups frozen peas and corn mix
- 1 cup diced lean ham
- 3 cups cooked brown rice (about 1½ cups uncooked)
Directions
- Whisk together soy sauce, ginger, and two teaspoons of sesame oil.
- In a wok, heat garlic and the remaining teaspoon of sesame oil over medium heat. Add the eggs and scramble them in the pan.
- Add green onions and cook for 2 minutes before adding the pineapple, peas and corn, and ham.
- Stir in the rice and pour the soy sauce mixture on top. Stir over medium heat until all ingredients are evenly dispersed.
