These incredibly soft gingerbread cookies are made with whole wheat flour for a healthier twist on a holiday favorite. The hint of lemon zest paired with the ginger in these cookies really make them to die for. These are my go-to cookies that I pass out to all my neighbors during the holiday season. No one even knows that they’re whole wheat, and I get asked for the recipe all the time!

Directions
1. In a medium bowl, whisk together flour, baking powder, baking soda, salt, ginger, cinnamon, and cloves until well blended.
2. In a large bowl, beat butter, brown sugar, and eggs on medium speed until well blended.
3. Mix in molasses, vanilla, and lemon zest.
4. Slowly add the dry ingredients and mix until blended.
5. Preheat oven to 375°F.
6. While oven is preheating, chill dough in the fridge and prepare baking sheets by coating with nonstick spray.
7. Lightly flour a flat surface. Place half of the dough on the surface. Lightly sprinkle flour over dough and rolling pin.
8. Roll dough out to ¼ inch thick.
9. Using your cookie cutter of choice, cut out cookies.
10. Space cookies 1½ inches apart on baking sheet.
11. Bake for 5–8 minutes (For soft cookies, cook for about 5 minutes.)
12. Remove from oven and cool.
13. Store in an airtight container to keep soft.
