Blueberry Breakfast Tarts

Kick your morning granola-’n-yogurt up a notch with these adorable breakfast tarts. They’re easy, yummy, and cute enough to serve at a party or baby shower. You can also enjoy them as a healthy dessert! Instead of refined flour, our tarts are made with oats, walnuts, chia seeds, and Greek yogurt, instead of cream cheese. With a few, simple swaps, you can make your favorite breakfast a nutrition powerhouse!

          Directions
          1. Preheat oven to 325°F. In a medium bowl, mix together oats, walnuts, chia seeds, coconut oil, honey, vanilla, and cinnamon. Stir until everything is well coated.
          2. Using an oiled spoon, press 2 tablespoons of the granola mixture into a lined muffin tin. Press onto bottom and up the sides to form a small cup. 
          3. Bake in the center rack for 15 minutes or until golden brown. Remove the tarts from the oven.
          4. Use the back of the spoon to press down the center of the tarts (they can puff up while baking). 
          5. Allow to cool completely in pan, then remove carefully by using a knife to release the sides. 
          6. Top each tart with 1 tablespoon Greek yogurt and 1 tablespoon blueberries.
