Chocolate-Covered Matzo

This is a quick and easy dessert to take to your Passover celebration! The combination of the crisp matzo cracker, caramel, and chocolate will make you feel like you’re eating a gourmet candy bar. I love that you can customize the recipe with your favorite toppings. The one I like best is sea salt, but I also like to use white chocolate, pistachios, and dried cherries. The possibilities are endless!

          Directions
          1. Place matzo on wax paper.
          2. In a small pan, melt the butter, then add the brown sugar and salt.
          3. Bring to a boil.
          4. Turn down heat, then simmer for about 2 minutes. This makes a quick caramel sauce.
          5. Pour caramel over matzo sheets, then spread until the matzo is evenly covered.
          6. Cool for about 10 minutes.
          7. While caramel is cooling, get your toppings ready.
          8. Microwave chocolate for 30 seconds at a time until melted, then drizzle or evenly cover the matzo. (I like to drizzle dark and white chocolate.)
          9. Top with your choice of toppings, like fruit, nuts, or just a little sea salt.
          10. Allow the chocolate to set, then break apart into pieces.
