Chocolate and peppermint are my absolute favorite flavor combination! And while I believe moderation in all things, I also think that if you can make a cookie healthier, but still feel like you are enjoying a delicious dessert, why wouldn’t you?! These delicious chocolate cookies are made healthier with beans and whole wheat flour, making them higher in protein and fiber and lower in calories!

Directions
1. Preheat oven to 375°F.
2. In a medium bowl, combine the flours, baking soda, salt, and cocoa.
3. In a food processor, cream together beans, butter, and brown sugar.
4. Add in the milk, egg, and vanilla.
5. Blend until smooth.
6. Combine the wet ingredients with the dry ingredients.
7. Mix until well combined.
8. Spray a cookie sheet with nonstick spray or use baking mat.
9. Drop about 1 tablespoon of the cookie batter and space them about 2–3 inches apart.
10. Bake for 8–10 minutes
11. Allow to cool completely before frosting.
12. While cookies are cooling, make the frosting
13. Cream together the powdered sugar, butter, milk, vanilla, peppermint extract, and salt.
14. Spread about 2 teaspoons of frosting on the cookies.
15. Garnish with crushed peppermint, if desired.
