Healthier Nacho Cheese

Are you a nacho cheese lover? Now you can indulge and still get your veggies in with this lightened-up version. Our taste testers were skeptical about the veggies, but then they were incredibly surprised by the amazing taste! My secret was to cook them in butter until they were incredibly tender. Besides adding vegetables, I also made the base of this cheese a basic roux to help decrease the calories. That way, you don’t need to use pounds of cheese to make the sauce. So whether it’s for the big game or just to satisfy a craving, you’ve got to give this recipe a try!

          Directions
          1. Heat ¼ cup butter in a skillet.
          2. Add zucchini, yellow squash, red bell pepper, onion, jalapeño, and garlic.
          3. Sauté until very tender and the onion starts to smell sweet—about 10 minutes.
          4. In a separate pan, heat remaining butter.
          5. Add flour, then cook until it starts to thicken.
          6. Add milk, then bring to a boil.
          7. Add cheese, then heat until it melts.
          8. Add veggies to the cheese mixture.
          9. Serve warm (I like to put ours in a slow cooker on warm for serving).
