Honey Whole Wheat Bread

Ingredients

1½ tablespoons active dry yeast
2 cups warm water
⅓ cup honey
⅓ cup rolled oats
2 tablespoons flax meal
3 tablespoons vital wheat gluten
1½ teaspoons salt
3-4 cups whole wheat flour

Directions

Combine the yeast, warm water and honey in the bowl of a stand mixture and let sit until the yeast begins to foam.
Add the oats, flax meal, gluten, salt, and 1 cup of the flour. Mix. Continue to add the flour (½ cup at a time) until the dough begins to pull away from the sides and form a ball. The dough should be soft, but not tacky.
Place the dough into a greased bowl. Brush oil over the top. Cover with a towel or plastic wrap and allow to rise until doubled. This should take about 45 minutes to an hour.
Preheat the oven to 350°F. Lightly oil an 8x4” loaf pan.
Form the dough into a loaf and place in the loaf pan. Allow to rise until it domes over the top.
Bake at 350°F for 35-45 minutes or until the internal temperature reaches 190°F. Cool for at least an hour before slicing.
