Instant Pot Mango Sticky Rice Porridge

I love mango sticky rice—so I thought one day, why not have it for breakfast? I decided to go with brown rice for some added fiber and nutrients, but don’t let it deter you—this porridge is delicious! Plus, it is made in an instant pot, which makes perfect brown rice so quickly and could not be easier. So if you are looking for a fun, new breakfast, give this porridge a try!

          Directions
          1. Put brown rice, coconut milk, water, cardamom, and cinnamon in the instant pot.
          2. Cook on manual, high pressure, for 22 minutes.
          3. You can do a quick release. I usually do a natural release, but this does add about 20 minutes to the cook time.
          4. Once cooked, stir in brown sugar.
          5. Divide into 4 bowls and top each bowl with ½ mango and 2 tablespoons coconut flakes. Enjoy!
