Lemon Pesto Tabbouleh

Ingredients

  • 1 cup boiling water
  • 1 cup bulgur wheat
  • ½ teaspoon salt
  • 3 tablespoons fresh lemon juice
  • Zest of one lemon
  • 1 clove garlic, finely minced
  • 2 tablespoons olive oil
  • 2 tablespoons basil pesto
  • 2 cups tomatoes, chopped
  • 1 cup edamame
  • 1 cup feta
  • 1 cup fresh parsley, chopped

Directions

  1. Pour boiling water over bulgur wheat in a large bowl. Set aside for 1 hour.
  2. When all the liquid is absorbed, stir in remaining ingredients.
  3. Enjoy cold! (This can be refrigerated for several days.)
