Ingredients
- 1 cup boiling water
- 1 cup bulgur wheat
- ½ teaspoon salt
- 3 tablespoons fresh lemon juice
- Zest of one lemon
- 1 clove garlic, finely minced
- 2 tablespoons olive oil
- 2 tablespoons basil pesto
- 2 cups tomatoes, chopped
- 1 cup edamame
- 1 cup feta
- 1 cup fresh parsley, chopped
Directions
- Pour boiling water over bulgur wheat in a large bowl. Set aside for 1 hour.
- When all the liquid is absorbed, stir in remaining ingredients.
- Enjoy cold! (This can be refrigerated for several days.)
