Mediterranean Arugula Salad

This bright, colorful salad is just what your summer needs! The tomato, beans, Kalamata olives, green onion, olive oil, balsamic vinegar, and garlic powder can be used immediately over the salad, but I love to let them marinate overnight so that flavors are really well blended. This salad is simple and delicious making it a great meal for a quick lunch or an easy dinner.
