
Pressure Cooker Pulled Pork
Ingredients
- 1 tablespoon olive oil
- 4 pounds pork shoulder, cut into 8 pieces
- 1 yellow onion, cut into large chunks
- ¼ cup honey
- ⅓ cup apple cider vinegar
- ½ cup 100% apple juice
- 1 (6-ounce) can tomato paste
- 1 teaspoon salt
- 1 teaspoon garlic powder
- ½ teaspoon paprika
Directions
- With the pressure cooker on the browning function, heat the oil and brown the pork on each side. Add the onions and heat until tender.
- Whisk together the honey, vinegar, apple juice, tomato paste, salt, garlic powder, and paprika. Pour on top of the pork.
- Seal the pressure cooker and set to high for 60 minutes. Use a natural release. When the pressure is released, remove the lid and shred the pork. Mix in your favorite barbecue sauce, if desired.
- This tastes amazing on buns, salad, tacos, or rice.
