Sausage Kale Fennel Stuffing
Ingredients
- 5 cups whole wheat bread, cut into chunks and dried overnight (about half a loaf)
- 5 cups sourdough bread, cut into chunks and dried overnight (about half a loaf)
- 1 pound hot Italian sausage (you can use normal sausage if you don’t like the spiciness)
- 4 tablespoons butter
- 1 yellow onion, chopped
- 2 teaspoons fennel seeds
- 4 large eggs, beaten
- 2 teaspoons kosher salt
- 2 teaspoons freshly ground black pepper
- 2½ cups low-sodium chicken broth
- 2 tablespoons balsamic vinegar
- 4 cups kale, chopped
Directions
- Preheat oven to 350°F.
- Cover a cookie sheet with aluminium foil, then cover with nonstick spray.
- Spread out the bread chunks onto the cookie sheet into a single layer.
- Bake for about 30 minutes to make sure that the bread is completely dried out.
- Transfer to a large bowl.
- Increase oven heat to 375°F.
- In a large skillet, cook the sausage thoroughly.
- Drain the grease, then place the sausage on a paper towel.
- Heat 2 tablespoons of butter in a skillet and cook the onion and fennel seeds until the onion is tender.
- In a large bowl, whisk together eggs, salt, pepper, broth, balsamic vinegar, sausage, and kale.
- Add the bread, then toss until all the liquid has been absorbed.
- Cover a cookie sheet in foil, then cover with nonstick spray.
- Transfer the stuffing to the cookie sheet.
- Coarsely chop the remaining 2 tablespoons of butter, then sprinkle it over the top.
- Bake for 30–45 min.
