Simple Granola Bars

Ingredients

  • 1 cup pitted dates
  • 1 cup roasted, unsalted almonds
  • 1½ cups old fashioned oats (gluten-free, if needed)
  • 1 tablespoon coconut oil
  • ¼ cup creamy, unsalted peanut butter
  • ¼ cup honey
  • ¼ cup semi-sweet chocolate chips (gluten-free, if needed)

Directions

  1. Soak dates in cool water for about 5 minutes. Drain and pat dry with a paper towel.
  2. Process dates in a food processor until no large chunks can be seen. It should form a rough dough consistency.
  3. Remove dates and process almonds until loosely chopped. There should still be some large chunks.
  4. In a medium bowl, mix dates, almonds, and oats.
  5. In a small saucepan, melt coconut oil. Add peanut butter and honey. Heat and continuously mix until well-combined and smooth.
  6. Pour warm honey mixture over oat mixture and stir thoroughly. Add chocolate chips and mix again until evenly dispersed.
  7. Line a 9×5” bread loaf pan with parchment paper. Press mixture into the pan. Cover with plastic wrap and place in the fridge or freezer to set for about 20-30 minutes.
  8. Remove from pan, cut into 12 bars, and store in an airtight container.
