Whole30® Pesto Zoodles

This is an incredibly quick, easy meal that can be thrown together in minutes! I, personally, think zoodles are always delicious, but then I added a healthy coating of a homemade pesto. It’s absolutely mouthwatering! I love making the pesto ahead of time, then I freeze it for future meals when I’m especially busy. This was an excellent choice as a side for chicken or other protein sources while I was on the Whole30 diet, but it’s so filling, it can be enjoyed anytime!

          Directions
          1. In a food processor, blend together all of the pesto ingredients. Process until smooth.
          2. To prevent browning for leftover pesto, cover exposed top with plastic wrap or olive oil. Leftovers will freeze well.
          3. In a large cast iron pan, heat up the olive oil, then add the spiralized zucchini.
          4. Cook the zucchini until just tender—about 3–5 minutes. Be careful to not overcook, or it will get soggy.
          5. Remove from heat, then toss with ¼ cup pesto and crushed red pepper to taste.
          6. Divide between two bowls, and enjoy!
