Avocado Deviled Eggs

Wondering what to do with leftover Easter eggs? Try these bright avocado deviled eggs, perfect for welcoming warmer weather! This recipe replaces the mayonnaise, used in a traditional deviled eggs, with avocado, giving you a major nutrient boost. The egg and avocado make an excellent combo, providing healthy fats, fiber, minerals, and vitamins. And, amazingly, they’re also paleo, vegetarian, and gluten-free!

          1. Place the eggs in a pot filled with cold water. Bring to a boil.
          2. Turn off the heat as soon as the water begins to boil. Cover for 10 to 12 minutes.
          3. Remove from heat, drain, then run the eggs under cold water.
          4. When the eggs have fully cooled, peel off the egg shells. Cut in half, lengthwise.
          5. Remove the egg yolks and place them in a medium-sized bowl.
          6. Add in the avocado, lime juice, onion powder, and garlic powder. Mash together until incorporated.
          7. Fill each egg white with the avocado mixture. If you want to be fancy, fill a piping bag with the avocado mixture and pipe into the egg whites. Top with green onions and sprinkle with smoked paprika (optional)
