
Autumn Dinner Salad
Ingredients
- 2 chicken and apple sausages, cut into ½-inch slices (homemade for paleo)
- 1 large, crisp, baking apple, diced
- 1 sweet potato, cooked, peeled, and diced
- ¼ teaspoon fresh, grated nutmeg
- 4 cups arugula
Directions
- Heat a large skillet over medium heat. Add the sausage and apples. Sauté until the sausage is browned—about 5 minutes.
- Add the sweet potato and nutmeg and cook for two more minutes. Serve over arugula.
