
Savory Butternut Squash Noodles
Ingredients
- 6 cups (12 ounces) butternut squash spiralized noodles
- 1 tablespoon olive oil
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 3 tablespoons unsalted butter
- ½ teaspoon garlic powder
- ¼ teaspoon nutmeg
- ¼ teaspoon dried basil
- ¼ teaspoon dried oregano
- ¼ teaspoon dried parsley
- 2 tablespoons sharp Parmesan cheese, grated
DIRECTIONS
- Preheat the oven to 400°F.
- Spread the butternut squash noodles out on a foil-lined baking sheet. Drizzle with the olive oil and season with salt and pepper.
- Bake for 10 minutes.
- While the “pasta” is cooking, heat the butter on medium-low heat until it starts to turn brown and smell sweet. Be sure to do this slowly, and stir the butter often to avoid burning.
- Add the garlic powder, nutmeg, basil, oregano, and parsley.
- Heat on low until sauce becomes fragrant.
- Remove the squash from the oven. Add the noodles to sauce and heat until are well-coated.
- Sprinkle the Parmesan cheese on top. Enjoy!
