
Apricot Chicken
Ingredients
- 2 pounds boneless, skinless chicken breasts
- ½ cup all fruit apricot preserves
- ½ cup lemon juice
- 2 tablespoons balsamic vinegar
- 2 cloves garlic, minced
- 2 tablespoons dijon mustard
- 1 teaspoon olive oil
- ½ teaspoon salt
- 1 cup dried apricots, chopped
- ¼ cup toasted sliced almonds
Directions
- Preheat the oven to 375°F. Lightly grease a casserole dish.
- Whisk together the preserves, juice, vinegar, garlic, Dijon, olive oil, and salt. Pour on top of the chicken. Cover with dried apricots.
- Allow to marinate for at least 1 hour, for best results allow to marinate for 24 hours. Bake for 25 minutes
- Top with toasted almonds prior to serving.
