
Avocado Coleslaw
Ingredients
- 1 avocado, halved and pitted
- ¼ cup white wine vinegar
- 2 tablespoons water
- 1 tablespoon sugar
- 1 teaspoon ground cumin
- 4 cups sliced green cabbage
- 2 cups grated carrots
- ¾ cup chopped green onions
- ¼ cup cilantro, minced
- ½ teaspoon salt
- ½ teaspoon black pepper
Directions
- In a food processor or blender, combine avocado, vinegar, water, sugar, and cumin until smooth.
- In a large bowl, toss cabbage, carrots, green onions, and cilantro.
- Add dressing and toss until well dispersed. Season with salt and pepper and toss again.
- Refrigerate until ready to use.
* Because avocado begins to brown after peeling, this salad doesn’t store well.
