
Avocado Egg Salad
Ingredients
- 2 hard boiled eggs
- 2 hard boiled egg whites
- 1 avocado
- 2 tablespoons nonfat Greek yogurt
- 1 teaspoon lemon juice
- 1 teaspoon Dijon mustard
- ¼ teaspoon salt
- ⅛ teaspoon ground black pepper
- 3 green onions, chopped
Directions
- Mash the eggs and avocado in a bowl.
- Stir in the greek yogurt, lemon juice, mustard, salt, and pepper.
- Top with green onions.
- Serve on crackers, pitas, toast, lettuce wraps, or enjoy plain!
