
Avocado Lime Chicken
Ingredients
- 1 tablespoon olive oil
- 1 large avocado
- 2 tablespoons lime juice
- ¼ cup cilantro, finely chopped
- 1 small jalapeño, diced (optional)
- 2 chicken breasts (4 ounces each)
- 3/4 teaspoon salt
- 1 teaspoon powdered garlic
- ½ teaspoon freshly ground pepper
Directions
- Heat olive oil in a large pan on medium-high heat.
- In a small bowl, mash the avocado with a fork. Stir in the lime juice, cilantro, and jalapeño.
- Butterfly the chicken into two thin slices. Sprinkle both sides of the chicken with garlic powder, salt and pepper.
- Place the seasoned chicken in the pan and cook for two minutes on each side, or until the internal temperature reaches 165°F.
- Remove from heat, top with the avocado mixture, and serve. This is delicious with corn, quinoa or brown rice!
