
Beef Satay with Peanut Dipping Sauce
Ingredients
- 8 wooden skewers, soaked in water
- 2 green onions, chopped
- 1 pound skirt steak, cut into 8 strips
Marinade
- 2 tablespoons lemon juice
- 2 tablespoons fresh ginger
- 2 tablespoons low-sodium soy sauce
- 2 cloves garlic, minced
- 1 tablespoon chili paste
- 1 teaspoon fish sauce
Peanut sauce
- 2 tablespoons creamy, natural peanut butter
- 1½ teaspoons soy sauce
- 1½ teaspoons fresh lemon juice
- ½ teaspoon fish sauce
- ½ teaspoon chili paste (more or less to taste)
Directions
- In a medium bowl, mix together the marinade.
- Add the beef strips and marinate for 30 minutes or in the fridge overnight.
- While beef is marinating, combine all ingredients for the peanut sauce.
- Add warm water until the marinade reaches the consistency you prefer.
- Thread beef strips through wooden skewers.
- Grill over medium-high heat for 3 minutes on each side.
- Serve the beef with the dipping sauce.
