
Broccoli Cheddar Soup
Ingredients
- 2 teaspoons olive oil
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 3 cups chopped cauliflower
- 2 cups low-sodium chicken broth
- ½ teaspoon paprika
- 1 teaspoon dried mustard
- ½ teaspoon curry powder
- ½ teaspoon salt
- Freshly ground pepper
- 1 cup fat-free half and half
- 1 head broccoli, cut into small pieces
- 3 carrots, grated
- 1 cup shredded sharp cheddar
Directions
- Heat 2 teaspoons of the olive oil in a large stockpot, sauté the onion with the garlic until tender. Add the cauliflower and the broth.
- Cover and cook the cauliflower until tender. Using an immersion blender, combine the onion, broth, cauliflower, and spices until smooth. Add water if soup is too thick to get smooth.
- Stir in the broccoli, carrots and half and half. Allow to simmer, covered until the broccoli becomes tender.
- Stir in the sharp cheddar. Enjoy!
