
Cabbage Apple Salad
Ingredients
- 2 tablespoons honey
- 2 tablespoons Dijon mustard
- 2 tablespoons Greek yogurt
- 1 teaspoon salt
- 2 tablespoons olive oil
- 2 tablespoons white wine vinegar
- 2 teaspoons curry powder
- 7 cups shredded green cabbage
- 1 sweet apple, diced
- ⅓ cup golden raisins
- ⅓ cup raw cashew pieces
- ⅓ cup chopped cilantro
Directions
- In a small bowl, mix honey, mustard, yogurt, salt, olive oil, vinegar, and curry powder until well combined.
- In a large bowl, toss cabbage, apples, raisins, cashew pieces, cilantro, and dressing together.
- Refrigerate for 1 hour and serve cold.
