
Chiang Mai Pork Patties
Ingredients
- 2 shallots, coarsely chopped
- 1/2 cup cilantro, chopped and divided
- 2 tablespoons lemongrass, minced and peeled
- 2 teaspoons lime zest
- 1 tablespoon fresh ginger
- 3 garlic cloves, minced
- 2 serrano peppers
- 1¼ pounds ground pork
- ¼ teaspoon salt
- 15 Boston lettuce leaves
- ⅔ cup fresh mint leaves, chopped
- 2 limes, juiced
Directions
- Place shallots, ½ cup cilantro, lemongrass, lime zest, ginger, garlic, and serrano peppers in a food processor. Pulse until finely chopped.
- Add pork and salt, then pulse until well combined.
- Make the mixture into about 15 equally-sized patties.
- Warm a grill to high heat. Cook each patty for 5 minutes on each side, or until cooked through.
- Place each patty on a lettuce leaf, then top with remaining cilantro, mint, and lime juice.
