
Chicken Avocado Pasta Salad
Ingredients
- 5 cups whole wheat pasta, cooked
- 2 cups cherry tomatoes, halved
- 1 avocado, cubed
- 8 basil leaves, sliced into strips
- 1 pound grilled chicken breasts, diced
- 6 ounces feta cheese, crumbled
- 1 (15-ounce) can low-sodium chickpeas, drained
Dressing:
- 1 avocado
- 1 cup nonfat Greek yogurt
- 1 tablespoon lemon juice
- ½ teaspoon garlic powder
Directions
- Blend the ingredients for the dressing until smooth.
- In a large salad bowl, combine all salad ingredients. Top with dressing and stir gently until all the noodles are coated with the dressing.
- Chill in the refrigerator until serving.
