
Chicken Cordon Bleu
Ingredients
- ⅓ cup breadcrumbs
- 2 tablespoons Parmesan cheese
- 1 teaspoon mustard powder
- 1 egg
- 1½ tablespoons water
- 2 pounds chicken breast tenderloins (8 pieces total)
- 8 slices low-fat Swiss cheese
- 8 ounces thinly-sliced deli ham
Directions
- Preheat the oven to 425°F. Grease a 9x13” baking dish.
- Combine the breadcrumbs, Parmesan, and mustard powder in a bowl. Set aside.
- Whisk the egg with the water in a separate bowl. Set aside.
- Pat the chicken dry with a paper towel. Wrap each tenderloin with a slice of cheese and a slice of ham, with the ham on the outside. Use a toothpick to hold it together, if necessary.
- Dip the chicken in the egg, then roll it in the Parmesan mixture. Spritz the chicken with cooking spray to help the breadcrumbs stick.
- Bake for 25 minutes.
