Chocolate Truffles

Ingredients

  • ½ pound heavy whipping cream
  • 2½ pounds high-quality* chocolate, divided
  • Extract of choice to taste (mint, cherry, almond, etc.)†

Directions

  1. Melt 1½ pounds of the chocolate either in a double boiler or a microwave. (If melting in the microwave, heat for 3 minutes at 20–30% power, stir, then repeat until melted. If melting in a double boiler, heat on low and allow the chocolate to melt for 15–20 minutes while mixing. You don’t want to get the chocolate too hot or allow steam from the bottom pot to come out and get into the chocolate, so do not boil the water in the base pot. To make sure that your pots aren’t getting too hot and burning the chocolate, you should be able to touch, but not leave your hand on, the lower pot. You should also be able to touch and comfortably leave your hand on the top pot. It should be just warmer than room temperature.)
  2. In a medium pot, heat the heavy whipping cream to a gentle simmer, but do not boil it.
  3. Simmer for about 1–2 minutes until a film forms on the top, and it starts to turn a pale yellow. Don’t cook it too long, otherwise it will curdle, but if you don’t cook it long enough, your truffle will mold.
  4. Cool the cream slightly. (You can let it sit for a few minutes, or you can add a tablespoon of cold butter to help cool it down, if desired.)
  5. Once the cream has cooled to almost room temperature, add the melted chocolate.
  6. Mix until smooth. (It might not look right at first, but just keep mixing.)
  7. Add flavoring and mix again.
  8. Place a long sheet of plastic wrap in a shallow casserole dish. (Your sheet should be about twice as long as the dish and hang over the sides.)
  9. Pour the mix into the casserole dish, then wrap the remaining saran wrap over the top of the mixture. Make sure the mixture is fully contained by the plastic wrap.
  10. Cool in the fridge for at least 3 hours.
  11. Once cooled, cut into small squares, then roll each square into a small bowl. (It helps to put cornstarch on your hands to keep things from sticking. I also like to put cornstarch on a cookie sheet and place the rolled balls on the cookie sheet until they are ready to use.)
  12. Melt the remaining pound of chocolate for dipping, using the same process as above. Once your chocolate has melted, let it cool to about 68°F. Otherwise, it will streak. (To know if your chocolate is ready without using a thermometer, pull out a small amount of chocolate with a fork, then let it to drizzle back into the ball. The drizzled bit should remain on top and not melt back in. At this point, your chocolate is ready to use.)
  13. Dip each truffle in the chocolate, then place it on a parchment-lined cookie sheet.
  14. You can add toppings before the chocolate sets, if you would like.
  15. Cool, and the chocolate will harden.
  16. Enjoy! Store (unlikely) leftovers in the fridge.

*This works with milk or dark chocolate. Be sure to use high-quality chocolate—preferably designed for chocolate making. Use nothing that contains wax.†Depending on the type of extract you use, you may need more or less. A ½ teaspoon is a good starting place, unless you are using a strong, high-quality extract like we did, in which case, we used 4 drops.

Apple Rose Pie

Ingredients For the pie crust ½ cup all purpose flour ¾ cup whole wheat flour 1 tablespoons sugar ¼ teaspoon salt 2 tablespoons cold unsalted butter, cut into small pieces 2 Tablespoons nonfat Greek yogurt 1 ½ tablespoons vegetable oil 2 tablespoons ice water For the filling 3 Pink lady apples 3 Granny Smith apples 1 tablespoon lemon juice ¼ cup brown sugar ¼ cup granulated sugar 1 teaspoon cinnamon ¼ teaspoon nutmeg Directions Combine flour, sugar, and salt in a medium bowl. Cut in butter with a pastry blender until crumbly. Mix in the Greek yogurt and vegetable oil. Add water, 1 tablespoon at a time, and combine with a fork until the mixture can form a ball. Lightly flour some plastic wrap, then place the dough on top. Flatten out dough. Cover with plastic wrap, then place in the fridge for 20 minutes. While dough is chilling, preheat oven to 425°F. Remove dough from fridge. Roll out on a floured surface to ⅛ thickness. Place dough in a 9-inch pie pan, then trim the edges. While oven is preheating cut the apples into thin semi-circle shapes leaving the skin on. Toss the apples in a large pot with the lemon juice, brown sugar, granulated sugar, cinnamon and nutmeg. Heat on medium high heat just until the apples are soft enough to bend without breaking about ten minutes. And remember to save the juice. Carefully arrange the apple slices around the apple pie crust starting with the outside and making your way to the center of the pie. Once you get to the center of the pie take small pieces and bend them around each other to create the center of the rose. Try to make the apples as compact as possible and go back and fill in any spots as necessary. You should be able to get all six apples in it. Drizzle the leftover juice over the apples and bake for 30-45 minutes. Cut into 8 equal slices and enjoy! iFit's Hot Cocoa Throwdown

With the holiday season in full force, it's likely many of you are cozying up by the fire with a delicious cup of hot cocoa (possibly with a ton of those magical mini marshmallows on top). And, if you're anything like me, you're the adventurous type that likes to spice things up a bit with the toppings and mix-ins. I'm always on the lookout for the best hot cocoa, which is why I asked our nutrition team to put together eight new and revamped recipes. Then, we had the iFit team put on their best ugly Christmas sweaters and choose their favorites. The process: Our nutrition team worked their magic in the kitchen developing a wide assortment of hot cocoa recipes. Between dark, milk, and white chocolates, they did their best to vary up the flavors while still staying true to a chocolate base. For each matchup, two competing hot cocoas were presented to the team. After a taste test, the winner was marked by each team member on their individual bracket. This process was repeated for all of the recipes. The contenders: Gingerbread Indian Spiced iFit Nourish Coconut Cioccolata Calda Salted Caramel Amaretto Rum Cherry And the results are... Cioccolata Calda takes the prize! While the other contenders definitely put up a strong fight, it was this rich Italian classic that took the cake. Customarily eaten with a spoon and served in a small shot-sized glass, this treat is a true indulgence. You only need a little, but just a small amount will leave you beyond satisfied.
