
Cilantro Lime Chicken with Couscous
Ingredients
- 2 tablespoons unsalted butter
- 1 pound trimmed chicken, sliced into 4 thin pieces
- 1½ cups low-sodium chicken broth
- 3 tablespoons freshly squeezed lime juice
- ½ teaspoon garlic powder
- ¼ teaspoon freshly ground black pepper
- 1 cup whole wheat couscous
Sauce
- 1 avocado
- 1 tablespoon freshly squeezed lime juice
- ¼ cup milk
- ½ cup cilantro
- ¼ teaspoon garlic powder
- ¼ teaspoon salt
Directions
- In a large skillet, melt the butter. Add chicken. Cook over medium heat for about 5 minutes on each side until it just starts to brown. Remove from pan and set aside.
- In the same skillet, add chicken broth, lime juice, garlic powder, and black pepper. Bring to a boil.
- Gently stir in couscous. Pace chicken on top.
- Cover and remove from heat. Allow to sit for 5 minutes to allow couscous to cook.
- While couscous is cooking, place all the sauce ingredients in a food processor and blend until smooth. Drizzle sauce over the chicken and couscous.
- Garnish with limes and cilantro, if desired. Enjoy!
