
Citrus Mint Couscous
Ingredients
- 1 cup water
- ¾ cup couscous, uncooked
- 2 tablespoons fresh mint, chopped
- 2 tablespoons freshly squeezed orange juice
- ½ teaspoon orange zest
- 2 tablespoon freshly squeezed lemon juice
- ½ teaspoon lemon zest
- ¼ teaspoon salt
- Sprinkle of freshly ground black pepper
Directions
- In a medium-sized pot, bring water to a boil.
- Remove from heat, stir in couscous, and cover.
- Let sit for 5 minutes, then fluff with a fork.
- Add remaining ingredients, fluff, and enjoy!
