
Classic Italian Salad
Ingredients
- 4 cups leafy greens
- 2 tablespoons red onion, minced
- 1 cup cherry tomatoes, halved
- 2 tablespoons banana peppers, sliced
- 4 kalamata olives, sliced
- ½ cup unsalted, canned garbanzo beans
- ½ ounce shredded Parmesan cheese (optional)
- 2 tablespoons Italian Vinaigrette
Italian Vinaigrette
- ½ cup olive oil
- ¼ cup white wine vinegar
- 1 clove roasted garlic
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- 1 tablespoon Italian seasoning
- ¼ teaspoon salt
- ¼ teaspoon ground pepper
Directions
- Add all dressing ingredients into a small bowl or cup and blend with an immersion blender using the whip attachment.
- Wash and cut vegetables.
- Drain and rinse garbanzo beans
- Toss everything together and enjoy!
