
Couscous-stuffed Apples
Ingredients
- ¼ cup walnuts
- ⅓ cup couscous
- 1 cup vegetable broth
- 1½ tablespoons slivered almonds
- 3 tablespoons cranberries
- ⅛ teaspoon cinnamon
- ⅛ teaspoon nutmeg
- ⅛ cardamom
- 6 apples
Directions
- Place walnuts and almonds in a small frying pan over medium-low heat. Cook, stirring, for about 4 minutes.
- Preheat oven to 350°F.
- Heat the vegetable broth in a pot until just boiling. Add the couscous. Set aside for 5 minutes or until the liquid is all absorbed. Fluff with a fork.
- Pulse walnuts and almonds in a food processor until finely chopped.
- Combine the couscous, cranberries, spices, honey, and nuts in a bowl.
- Line a baking tray with aluminum foil and cover with cooking spray.
- Use a knife to remove the top and cores of the apples. Use a spoon to hollow them out.
- Divide the couscous mixture among the apples. Cover with apple tops.
- Bake for 20 minutes.
