
Cuban Rice and Beans
Ingredients
- 1 tablespoon olive oil
- 1 large white onion
- 14 ounces smoked or Italian sausage (gluten-free if needed)
- 14.5 ounces no-salt-added diced tomatoes and juice
- 5 cups chicken broth
- 1 ½ cups diced carrots
- 3 cups diced celery
- 1 large red bell pepper
- 1 teaspoon thyme
- 1 teaspoon oregano
- 2 tablespoons chili powder
- 2 teaspoons cumin
- 2 tablespoons powdered garlic
- 1 cup uncooked brown rice
- 1 pound dry black beans beans
- 6 ounces tomato paste
- ¾ cup diced green onions
- ¾ cup chopped cilantro
- 3 cups shredded cheddar cheese (optional)
Directions
- In a large saucepan, heat olive oil over medium heat and add onions. Sauté until onions are tender. Slice sausage into small rounds and add to onions. Cook until lightly browned.
- Place sausage, onions, diced tomatoes, chicken broth, carrots, celery, pepper, seasonings, rice and beans in the slow cooker.
- Stir and cook on low for about 10 hours. 1 hour before serving, add tomato paste.
- Top with 1 tablespoon green onions, 1 tablespoon cilantro, and ¼ cup cheddar cheese if desired.
