
Fresh Avocado Shrimp Salad
Ingredients:
- ¼ cup sliced green onions
- 1 tablespoon lime zest
- ½ teaspoon ground cumin
- ⅓ cup fresh lime juice
- 2 tablespoons minced cilantro
- 1 teaspoon olive oil
- ½ teaspoon salt
- 2 Roma tomatoes
- 1 avocado
- 1 small jalapeño, deveined with seeds removed
- 1 pound cooked shrimp, tails removed, then cut into pieces
Directions:
- Prepare the dressing by mixing the onions, zest, cumin, lime juice, cilantro, olive oil and salt in a small dish. Allow to sit for 5 minutes.
- Dice the tomato, avocado, and jalapeño.
- Combine the shrimp with the tomato, avocado, and jalapeño. Pour the dressing on top and toss to evenly distribute.
