
Greek Couscous
Ingredients
- 4 cups cooked couscous
- 1 ounce sharp Parmesan, grated
- ¾ cup sun-dried tomatoes
- ¾ cup artichoke hearts, drained and chopped
- 1 cup spinach, chopped
- 1 teaspoon freshly ground black pepper
- ½ teaspoon salt (or to taste)
Directions
- In a large bowl, combine cooked couscous (while it’s still warm), sun-dried tomatoes, and artichoke hearts. Mix well.
- Stir in spinach and Parmesan until evenly incorporated.
- Season with pepper and salt.
