
Greek Meatloaf
Ingredients
- 2 pounds lean ground turkey
- 1 red onion, diced
- 1 red pepper, diced
- 1 (10-ounce) package chopped, frozen spinach
- 10 pitted kalamata olives, coarsely chopped
- 2 cloves garlic, minced
- 1 egg white
- 3 tablespoons balsamic vinegar
- ¼ cup fat-free chicken broth
- 8 ounces feta cheese
- ½ cup quick oats (gluten-free if necessary)
- ½ teaspoon salt
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
Directions
- Preheat the oven to 325°F.
- In a large bowl, combine all ingredients and mix until evenly incorporated.
- Form into a loaf and bake for about 75 minutes or until the internal temperature reaches 190°F.
- Allow to cool 5 minutes and cut into 12 pieces.
