
Hasselback Sweet Potatoes
Ingredients
- 2 sweet potatoes
- 1 tablespoon melted coconut oil
- 2 tablespoons pure maple syrup
- ½ teaspoon fresh ground nutmeg
- 1 teaspoon cinnamon
Directions
- Preheat the oven to 375°F.
- Cut the potato into thin slices, without cutting all the way through.
- Place in a 8x8” casserole dish.
- Drizzle the coconut oil and maple syrup on top. Sprinkle with the nutmeg and cinnamon.
- Loosely cover with foil. Bake for 60 minutes.
