
Honey Roasted Delicata Squash
Ingredients
- 1¼ pounds delicata or acorn squash
- ¼ cup red onion, diced
- 1 tablespoon olive oil
- ⅛ teaspoon fine sea salt
- ⅛ teaspoon ground pepper
- 2 tablespoons honey
- 1 tablespoon apple cider vinegar
- ¼ cup pomegranate seeds
- ¼ cup pine nuts, toasted
- 2 tablespoons fresh mint, finely chopped
Directions
- Preheat oven to 400˚F.
- Cut the squash in half lengthwise.
- Remove the seeds and loose fibers.
- Cut into 1-inch cubes.
- In a medium bowl, toss the squash with the onion, oil, salt, and pepper.
- Lay out on a baking sheet.
- Bake for 15 minutes, turn over, then back for an additional 15 minutes.
- Prior to serving, mix together the honey and vinegar in a saucepan.
- Bring to a boil over high heat.
- Lower to a simmer for about 10 minutes.
- Drizzle over the squash.
- Top with pomegranate seeds, pine nuts, and mint.
